Ravioli are very popular in Europe. People experiment on a wide choice of fillings to explore over different flavors, occasions, moods and nutrition philosophies.
This is the case when a commonplace meal appears a specialty. The secret of ravioli by Kulinarium Meister is a fresh quality dough, which has never been frozen. This time our choice of filling was a traditional potato. We used some Cheese to add delicate creamy notes and a pinch of basil for piquant flavor.
Pour 1.5 l of water into a large pot to cook one package of ravioli (20 pieces). Bring the water to a boil, add a bit of salt (the filling in the ravioli is cooked and salted). Delicately put the ravioli into the boiling water, return to a boil and reduce heat. Cook ravioli for 3-5 minutes over medium heat. Remove them to a colander. Serve with melted butter or sauce. INGREDIENTS: Dough 50%: all-purpose top quality wheat flour 70% , durum wheat flour (semolina) 30%, water, salt, ascorbic acid. Filling 50%: potato 65%, hard cheese 20%, dried whey, basil, salt, black pepper.
